Farmhouse Chicken Pie

Ingredients

1kg diced chicken thigh

25g Roast Chicken Seasoning

1 carrot, diced

2 leeks, finely sliced

2 garlic cloves, finely sliced

½ onion brown, finely diced

¼ cup plain flour

250mls milk

2 Tbs butter

½ a pinch each dried sage, rosemary and thyme
Directions
Cut chicken pieces into equal pieces and toss through Providore’s Farmhouse Chicken Pie Seasoning.
Brown off veg in a pan until soft, put aside in a bowl.
Repeat with the chicken using the same pan, deglaze with verjuice or white wine.
In a large pot slowly melt the butter, when melted add the flour and stir well. Add the milk to make a white sauce, season.
Add veg, chicken and dried herbs to the milk mix. Simmer until chicken is cooked, stirring often.
Place the cold chicken mix into a prepared pie base and cook until golden brown.
