• Wholegrain Bean and Lentil Soup Mix



    (Packet makes 12 serves)

    • ½ pack of Wholegrain Bean and Lentil soup mix
    • 2tbs olive oil
    • 1 brown onion, fine diced
    • 1 large carrot peeled and diced
    • 1 zucchini, diced
    • 2 sticks celery, diced
    • 400g can diced tomatoes
    • 4 cups stock of your choice
    • Squeeze of lemon juice
    • Salt & pepper

    Pour half the contents of the soup mix into a bowl and add enough water to cover. Soak soup mix for 4-6 hours or preferably overnight. Drain and set aside. 

    Heat oil in a large saucepan over medium heat. Add onion and sauté until soft. Add stock, tomatoes and drained soup mix.

    Bring to the boil, then simmer for 20 minutes, add remaining vegetables and simmer for a further 15 minutes. 

    Add salt and pepper to taste then a squeeze of lemon juice and fresh parsley or basil if desired.

    Serve with grated parmesan cheese and crusty bread. Leftovers can be portioned and frozen for later use.
