Massaman Curry Powder 100g
Recipe
INGREDIENTS:
- 2 confit duck legs
- 2 tbs peanut oil or vegetable oil
- 3 tbs Providore's Massaman Curry Powder
- 1/2 onion diced
- 8 chat potatoes cooked and cut in half
- 400mls coconut cream
- 1 cup chicken stock or water
- 1 tbs brown sugar
- 1/4 cup lemon juice
- salt & pepper to taste
METHOD:
Mix Providore's Massaman Curry Powder with 3 tbsp of water & mix until a paste forms, put aside. Heat oil in a frypan, add onions and cook until softened, add curry paste fry for 1 minute then add coconut cream, stock, potatoes & duck legs. Bring to the boil, then reduce and simmer for 10 minutes. Add the brown sugar & lemon juice, season to taste. Serve topped with crushed peanuts & coriander.
